Wood pulp bannetons
These wood pulp bannetons come in different shapes and with different interior patterns. I find they release the dough quicker with less chance of sticking to the dough than the conventional cane bannetons. I wish I had these when I first started out on the sourdough journey. For a commercial environment I wouldn’t use the flat bottom round shape ones like the one I bought here because they create a shallow shaped loaf. If you have ever turned out your 100’s sourdough dough on a production line the last thing I want is to use bannetons emphasising shallowness. You can buy deep shape ones. For the home it doesn’t really matter.
