Differences In Coconut Milk
I use to think you could buy any can of coconut milk and it would be pretty much the same, but it can vary considerably in how sweet and strong tasting it is as well as how thick. Some tins contain coconut milk that is barely thicker than water and if you don’t like a strong taste of coconut this would be ideal to use for your curries. Other tins contain coconut milk where most of it is solid and once mixed it has the consistency of thick cream.
The aroma and colour will also vary, I used a tin about two weeks ago that smelt very strong of coconut and quite sweet, and colour can vary from the brightest white to dirty white but has no correlation to thickness. I buy my coconut milk from either the Asian section in supermarkets or my local shops selling Asian products, they are by far the best value rather than big brands. Buy different brands to find one you like.
