You see even after 20 years of baking I still do classic mistakes such as this one of wrongly assuming non-stick baking tins are non-stick!  However, other than the fact that this is one of the ugliest cakes I’ve made there was very little else wrong with it.  I was trying to go for the upsidedown pineapple cake look, but managed to achieve the ‘cake that’s had a traffic accident’ look instead.  I’m trying out recipe variations on my yoghurt cake, it’s the same cake I made for the girls birthdays back in July; middle child’s birthday and 3 year old’s birthday.  I have now made the cake a few times, sometimes with icing sugar as with the birthday cakes and must tell you it has been met with lots of high praises so I know I was on to a winner.  I was all ready to post the recipe on here when I started to make a variation with blueberries, and looked beautiful but the blueberries all sank to the bottom, should have dusted them with flour first.  I have also made the recipe into cupcakes and muffin types and this was my latest attempt yesterday with Victoria plums.

I’m hoping to post the recipe in the next week or two but need to experiment a little more to see pitfalls with this recipe, such as trying out the different brands of yoghurts as some are thicker than others, causing the mixture to be runnier, hence the sinking of blueberries. Also using the sour fruit such as the plum I need to make one little adjustment.  When I do post the recipe I can not recommend highly enough trying it out with the Victoria type of plum, if like me you like a sourness in your cake to contrast against the sweeter crumb.  I like lemon flavoured baked goods, sour cooking apples and rhubarb so the slight sourer plum went down well.  If your tooth does not like sourness then obviously stick to plain with icing or the sweeter fruit such as blueberry.

Should have know better after all these years and buttered and floured the tin and in fact because of the ridges at the bottom I should have lined the bottom to ensure the plums didn’t stick to the tin as they did here.

The Yoghurt & Blueberry cake I made during the summer, the mixture being a little too runny, making the blueberries sink to the bottom, should have dusted them first in flour.  It has no impact on the flavour though just the look.
